quinces


I made a little treat for the colder winter days (that hopefully will come). Quinces preserved in red wine. It is great when you serve it warm with vanilla ice-cream!
You need some canning jars- boil them first in water for a few minutes.
Here's how to do it:

1kg of quinces- cut them into slices.
1 liter of red wine
approx. 200 grams of sugar (depending on how sweet you like it)
2-3 cinamon sticks
3-4 star anises
a bit cardamom
2-3 cloves
and a bit ginger, if you like

cook everything together until the quince is soft.
Fill immediately into clean canning jars, seal the jars and let them cool down on a clean towel.
